In Outlook Address, how to ADD Columns

I was able to remove columns, but now I want to add specific columns back in or even add all of them back in and then remove the ones I don't want.
 
Right-click on a field and select 'field chooser'.

The question should be [red]Is it worth trying to do?[/red] not [blue] Can it be done?[/blue]
 
Field chooser shows up in the email window, but I am trying to add columns in Tools, Address Book.
In that, if I go to the columns and use right click, no choices show up.
 
File > Properties > All Fields > New ..
