I need to find a way to specify that messages in the sent items folder cannot be deleted for 14 days once they are sent by a user. This will allow us to monitor recent sent items by simply opening the individual mailbox. Does anyone know how to do this?

I don't know of any way this can be done with Exchange. However you can get a 3rd party program that can do this for you. I use Super Scout Email Monitor. Every message that leaves for the internet is stored so that we can check for compliance with company email policy concerning messages sent to outside agencies. It also allows me to block certain incoming messages based on sender, subject matter, etc.
