You can't... well not very easily. The best way I have found is to backup all data and re-install Win2k from scratch.
I did have partial success re-installing Windows2K over the top of the present installation and re-applying the service pack but it left some .dll's and other shared components at IE6 level causing quirks.
If you have SP3 installed, you can edit the sysoc.inf file which is located in the C:\winnt\inf folder (May be hidden). there are various entries in here with the word HIDE in the string. If you remove these various optional components appear the next time you go into Add remove components. One is IE6 & Outlook express. I have removed Outlook from all PC's here but never tried IE6.
