If possible can I set up some kind of policy that says if an email address either a full email address or a any email with a specifc domain comes into the exchange server to be routed to another email address in exchanges.
You can forward from any mailbox to another mailbox or a mail enabled contact, however you can't filter on a domain name or email address. You can setup rules within Outlook to do that.
