Files on a shared driive

I have a few Quickbooks databases on a shared drive which all users access. How can I set the security on the files so that users can have full access to the files to imput and make changes to databut restrict users from being able to delete the files?
 
On your permissions page don't give them the delete rights
 
I am having a strange problem with my small network? We are using Windows 2003 Server running Active Directory, DNS, and DHCP all of one copmuter that supports about 25 XP Pro workstations. The problem that I am having is that between 4:30 and 5:30 PM I get complaints that shared folders through mapped drives are locking up, and the PC's become unresponsive. Rebooting the computer always fixex this problem. I have checked the server while the problem is happening and can find nothing wrong, as amatter of fact because of time of day the server is doing nothing, 98% of the processors (Dual Xeon) is idle. If I check the computer that is having the problem the memory usage is at 100% and locked up. Not all of the computers on the network are doing this. The only thing that the ones with the problem have in common is Quickbooks. I am all most convinced that Quickbooks has somthing to do with my problem. The Quickbooks database resides on the server, and 4 clients who are logged in all day. I hope someone can help, because I really have no idea whats going on here.
