If you create a new Folder and simply call it 'Filed' then any email that you file will get sent to this folder and sub folders for each month will get created for the new mail.
If you are lucky you will find all the mail that was previously filed in the Deleted Folder, so you can drag all the email from Deleted to a particular Filed folder.
If the emails have been unfortunately deleted, then you will loose access to previously field email. It would still be accessible from the Activity List or Contact Record.
