Fate of My docs when changing domains

We are moving from an old windows 2000 domain to a new windows 2003 Domain. Many users save important documents saved locally on their workstation in the my documents folder and on their desktop.

What happens to the my documents folder when we bring in a new 2003 server and a new domain. Do we have to copy the contents of the my docs to the root of c and then copy them back the user once he joins the new domain? What about outlook ?

Is there easier way to move the old user profile to the new domain without having to manually copy everything?
