I was wondering if anyone here setup a way to filter out the spam coming into their exchange server. I was looking at setting up a Linux server and filtering the spam with that and then have it relay it to the exchange server. Has anyone tried a setup like this?

Yes, lots of people do it like that. There are many different solutions available.

You could also consider a 3rd party solution, like MessageLabs.

Do you know of any good writeups that would guide me through this. I currently have a Linux box setup for a database and I have Windows 2000 with Exchange 5.5 running on it.

Personally, I like xwall! It's very light and works well, try it for free! (I don't work there but I like the product very much!!)
