Ethernet Into Aux Port - can it be done?

No, and don't even try it as you are likely to damage something. The Console & Auxiliary ports are V24/RS232 and are a completely different technology than Ethernet (albeit presented on the same type RJ45 connectors).

The 2504's are still useful though as they have serial ports and you can simulate networks by using Loopback interfaces etc, plus all the WAN features can be configured and tested etc. It is probably worth getting hold of a couple of routers with Ethernet or FastEthernet as well, that way you can get some workstations connected as well.
