Is there any way I could have someone’s emails copied to someone else without the user knowing, and the user still receives a copy?

It depends; if you are sender, use Bcc:, if you are server administrator, you can configure mail system to do so. I cannot give you detailed configuration, because I don't know your mail system type/version.
