Does anyone know how to create a Pantone colored drop shadow in Illustrator CS using the "Effects-Stylize-Dropshadow" menu? It only seems to allow me to make a drop shadow in 4 color.

Seems you can't do it. Here's 1 work around.
Select your object and clone it (holding Option key while clickng and moving in mac). Then select the new object, color with the Pantone, and go to Effects/stylize/feather. Select the feather radius - similar to blur in drop shadow. You can then move this behind the original, and position/scale accordingly, giving the same effect as drop shadow.
