Is there any way to make a drop down menu in Word list options that will place different graphics in the page depending on which option is chosen.

What I'm trying to do is make it so that there can be scanned image files for signatures and users will be able to use thier signatures by choosing a code from a drop down list and thier signature will be placed in the correct part of the document.

Why not set up the signatures as AutoText entries? Scan them in then copy the scanned image and save it as an AutoText entry in the relevant templates. Works for me and my clients.
