Hello .. in simple terms, what is the purpose/function of dir.edb file? Why is it important in Exchange restores?

The dir.edb contains the Directory Database. Your mailbox is contained within the Directory. The Information Store contains your actual mailbox data. So if you restored an Information store to a new server that had a blank directory, you would have mailbox data, but no way to retrieve it as you have no mailbox!
