Detecting SPAM

Hi!
Several mailservers are using antispam, what I found is that they detect spam not only because of keyword the smartly detect spam, Does enyone knows how it works? how they detect spam without keywords?

My first guess would be by number of emails that one server sends at a time.

Is it valid assumption?

What I ment, I got my email client (made with VB) what I want is to detect if an email is spam when I download it.
I guess antispams checks subject & domains to guess if it is spam or not.
What I want to know is what concept do they apply to guess that an email is spam (it is not flawless but it helps)
