Dates changed when copying files or folders

I am running XP Pro, and find when I save attached files from email the dates and times are changed to current. This is most unhelpful. Also moving (and I assume copying) folders from one drive to another causes the date/time to be changed to "now" on the folder (thought the file dates are preserved - possibly because I cut and pasted the folder as a whole).
The destination drive is NTFS, though this is possibly irrelevant.
Hope the answer is as simple as a setting somewhere. I have searched MS knowledge base to no avail.

Thank you for your pointers to this information. I see I am stuck with it. I tried to use a file date modification program once but it didn't work. If any know of one please advise... thank you
