Create a grid for info entry using other fields

Been battling this for ages and must be missing something simple! A user enters a list of items in one table eg Names of students. In another table a list of subjects which are available to the students is entered.

Is there any way to create a new form/table/datasheet where the Subjects list is put along the top, the Names are down the side, and then let the user fill in a %mark and a symbol (ie two pieces of data) for each person in the list, the inputted info which gets stored in another table (or even in one of the two existing tables). I dont want to specify the subjects or names during design as they will change from year to year.

The only difficult thing here is deciphering your problem - what is it?
