How would I set up 2 metro ethernet lines on a cisco 1841 router ?

If you are using metroE you wouldn't use a router as you would plug both connections into a switch.

That would be great.. But I am using a router. Shouldn't I be able to use the 2 eth interfaces of the router ?

Yes, but configuration depends on how your provider provisioned the circuit.
