What are the best "defaults" for Character justification? In QUARK I am used to using 85%, 95%, and 105% -- but now that I can use OpenType, I am wondering what is the ideal.

I wouldn't worry about it. because you are not going to be setting a book using the OpenType features...are you...only headings and short paragraphs...where it doesn't really matter that much.

Actually, we DO set books and journals. So the settings are important to us. I would appreciate any advise on this matter.

Yeah sorry, I didn't say you didn't set books and journals. What I was saying was, if you are going to make use of the OpenType features, such as Swash or Discretionary Ligatures as part of the body text then it would be hard to read.
I would only be using those sort of features as headings, small paragraphs where it doesn't really matter that much.
As for settings, it depends on the client but most of the time I have them set for 75% 85% 100%
