Changing SMTP server to use

I am running Outlook 2000 with Exchange server support and need to be able to change the SMTP server for individual messages and cannot seem to find out how to do it. I used to see this option prior to Exchange Server support in the Options pull-down but it no longer exists in the current configuration.
 
You can do it this way, if you have an Outlook icon (not the shortcut) on your desktop, right click it and go to properties. Then highlight MS Exchange Server and click on the properties button, you can change the server in here. If you only have a shortcut to Outlook on your desktop, go into the control panel and double click on the Mail icon. Jay~
