Changing Service Account on Exchange 5.5

If I were to do the Disaster recovery method to move Exchange 5.5 on Windows NT to Windows 2000 would I be able to change the service account that runs all the Exchange services?

i have done this before, there are a few things you cannot change, and thats the service account, also the Site and organization. Its possible to change the DOMAIN, i know it says this cant be done but i have done it a couple of times.
The only way to change the service if first put the 5.5 working on the windows 2k and the migrate to exchange 2k.

Thanks I appreciate the info. I found MS white papers on how to change the service account. I guess I will just wait until everything is moved over then change it.
