Changing from email from servers email address

HI

Being a newbie to PHP I have managed to write a script for form handling etc but I can't seem to change the "FROM" email when sending a reply to the person who filled in my form. EG instead of Mr JONE@AOL.com being in the FROM field of the email he would get nobody@CWCS.co.uk.

Any suggestions?
