All txt-files I have seen so far didn't allow to specify a certain font - not even a single font, not to mention different fonts.
Excel has widely been known as spreadsheet program, not as textprocessing.
Most people open .xls-files with excel, but it possible to open html-files and csv-files, which both aren't binary.
You could have a look at the apache-hsf project, which is dealing with excel.
