Can you dedicate one processor to SQL

We are looking at purchasing a new server to run SQL and we are looking at a dual processor machine. My question is can I buy one processor license and dedicate just one processor to SQL or do I have to buy two processor licenses now?
 
Nope, you have to license all the processors which are physically installed in the server even if SQL will not be using all the processors. I've got a FAQ on SQL licensing faq962-5153 that may help you out.

If your server isn't going to be accessed by people online and you are a fairly small shop, CALs may be a better option for you. There's info in the FAQ on how to figure out if CALs are a good option for you.

Does this also apply to SQL Server 2005, ie. it's not clever enough to use just the 1st processor and ignore the 2nd?

It applies to all versions. It's not that it can't be dedicated to one processor. It's that Microsoft can't be sure that you are only using one processor. There's two available and you could be using both - so both need licensed.
