Breaking a Mirror in Windows 2000 Server

I have an IBM Server running 2000 Server. It has 2 20gig SCSI drives that are mirrored. I want to break the mirror, replace the drives with 2 36gig SCSI drives, and use a product like Volume Manager to resize the partitions, then recreate the mirror. Can anyone help with the steps and how too's involved?
 
brake the mirror.
create a full data backup from 1 of the previous mirrors member.
replace the disks
restore a backup on one of them
mirror it to the second one.

Shouldn't I be able to just break the mirror, insert a new disk, re-create the mirror, then break it again and insert the second disk and recreate the mirror agai?
 
no. why recreate and the brake again? Use my steps and everything will be OK.
