Best Practices: checking logs

Aside from checking event viewer, I'd like to maintain a daily practice of checking server logs and such. We have seven 2k3 servers, SBS and R2. Ive employed an mmc that checks all of them from one location but what else should I be looking for? Im in my first 6 months of sysadminship and Im just looking for some guidance.
 
I run two servers but I check all logs everyday, but 2 you should keep an I on is DNS & Directory Services.
 
You can also configure some alerts to shoot you an email or page if you need.
Of course defrag regularly. Set security to check for bad logon attempts on shares etc. This way you can see if someone is hacking away trying to get in.
 
There is a free product created by some Microsoft guys that can help you manage logs. The time it takes for you to manually go through Server logs, IIS logs, Exchange logs, etc... is a pain in the A$$

Take a look at Output the reports and impress your boss....
