Does the System State backup exchange and sharepoint without any thirdparty software.

System State is JUST the Windows System State - it does not include Exchange and Sharepoint.

How can i backup exchange without using the wizard. Would backing up the information store using NTBACKUP work?

Just use the Backup program. I'm sure it's in the menus under accessories somewhere... I usually just go to start, select run, and type NTBACKUP.

DON'T use the backup wizard that starts by default (well, maybe you can - I never do) and then select the information store from the list of options to backup on the backup tab. I normally backup to files.

By the way - to me, this is the ONE EXCEPTION to the rule that with SBS, you should use the Wizards WHENEVER POSSIBLE.

If you want to effectively back up Sharepoint without using the SBS tool, you can't use ntbackup. You'd want to either use SQL tools to backup the SharePoint database, or better, use the STSADMIN command-line tool, which is the better tool if you aren't much of a SQL DBA.

Here's the basic syntax for using STSADMIN:

stsadm.exe -o backup -url -filename d:\backup\sharepoint\backup.dat

Read the help for more, since there is a lot of optional complexity.
