I need to move Exchange 5.5 from its current very unstable server platform to recently purchased hardware running Win 2000 server.

Has anyone successfuly, done this before, if so how?

We are about to embark on this very same journey. Any pointers you could pass along would be great.
 
Hi!
- It will be helpfull if you export the mailboxes with ExMerge into PST files as a backup just in case.
- The new Server will have a different Internal IP address so you have to change the settings on your Firewall and point the external traffic coming on the external IP/port 25 (110 for POP3, 143 for IMAP, 80 or 443 for OWA etc ) to the new server.
- If you have Antispam software or antivirus gateway make sure to reconfigure and test them with the new server
