Does anyone any documentation in regards to setup and VPN phone? I'm looking to setup a few of the 9608's that I have deployed for this.

Avaya VPN Phone Setup

Yes -- I'd like to point you to Start by reviewing the manual for the phone, there is a section for VPN connectivity in there.
You can specify your VPN settings manually on the phone device (long hard and slow [twss]), or the preferred method of putting them all into the 46xxsettings file to grab once from the office file server.
Configuration of your device is another thing -- Avaya has a bunch of guides on the support site for systems they have verified compatibility with. If your system is not in there, then you may have a bit more manual work for yourself.
After reviewing all that, if you have any specific questions I'd recommend posting them here.

Configuration of the device and the verified compatibility are where on the Support site? Is it called something specific?

Nope ... look for application notes under the documentation areas for the specific phone model.
