Sure. Go into Exchange Admin, under the properties of the mailbox, go to Delivery options. Set the alternate recipient to be your 'virgin' mailbox. Make sure you set delivery to both original and alternate recipients, otherwise the original mailbox won't receive the Email!

The other option is to set up Message Journaling. This automatically makes a copy of any message to another mailbox. Depending on how many users you have, this may be a lot easier. Search on microsoft's technet for help on setting this up - it needs a couple of supported registry hacks.
