I have a Remote Terminal Server and I use my administrative tool for AD for User and Computers, so I can create new user accounts remotely. However I can't do any Exchange functions on this box. How do I extend the schema on this Terminal server so I create an Exchange mail account when I'm using that server.

You need to install Exchange System Manager on the box.
And then the correct service pack for Exchange as well.

So just run the installation and choose System Manager only

Correct. You'll need the Exchange pre-reqs installed, and, as ntinlin mentioned, you should install all service packs on that workstation that are also on your Exchange box.

Oh, one other point, if you happen to have Outlook on that Terminal Server then installing ESM is generally a bad idea.
