Active Directory Destroyed - Exchange Access possible?

If our active directory destroys itself, backups fail, system is completely unrecoverable all we have left is our exchange databases, the logs etc... is this information still accessible? Can we simply mount the databse onto another 2000 exchange server, and some how mount one of the new users onto one of the old mailboxes? or simply extract the mail from the database?
