Ok, I figured that one part out, I had to do a get-mailbox * first and then pipe the set-mailbox command afterwards. Now, my questions is, will I have to manually add the quota to each new account or is there something I can set to automatically do this for me? -Wes

Did you check the limit set on each of the indivdual databases within ESM? Admin Groups\site\server\storage groups\database. Right click and look at the limits tab.
