Download and install NT4 service pack 6a and the post Service pack 6a security rollup package from the MS download site - not Windows update. I would not bother with anything else.
Windows Update does not work with NT4 anymore.
Don't use personal folders - size your Exchange to match your requirements and if properly set up and maintained should be very reliable. Set limits on the mailbox sizes and enforce them! You can have a mail store size of up to 75G with Exchange Std which should be enough for a hundred or so...

Why not start again and create a single RAID 5 with all three disks and keep Windows and Data in the same partition?
I don't think you would notice any performance loss as you are already using part of all the disks for the RAID 5.
Or get a fourth disk and have a System RAID1 on one controller...

As above reply and also Standard with SP2 has a database limit of 75GB max per store. It's set in the Registry - default is 18GB. Enterprise is unlimited.
