I have a report which contains 3 formulas to calculate some delivery parameters (Avge days to process, avge days to receive, avge days to prepare/ ship)

I then chart these for the last 24 months.

How can I access or customise the chart legend so that at the very least I don't get the '@' sign in the legend entries?

You have to build a manual legend.  There is no way to remove the @ sign.  An alternative would be to calculate your averages within a View or a Stored Procedure and then base the chart off those values.
