My text consistenty uses this term without a definition. What's a "hash" key?

"Hashing" is a way for a program to search for things very fast. A hash key is a table that a program uses to do the search. Your best bet is to look at The Art of Computer Programming, Vol. 3: Sorting and Searching, by D.E. Knuth.
