MS Exchange (OL98) to Unix HTML Formatting

MS Exchange (OL98) to Unix HTML Formatting

(OP)
I'm in the process of helping to set up an NT network. We've got Exchange 5.5 running on the server, Outlook 98 on the clients set to send in plain text. When someone on OL98 sends a message to some of our people on Unix based clients the messages come through in HTML format with one of the META tags at the top saying the creator was MS Exchange Server. Anyone have any idea how to turn this off and stop the Exchange server from converting mail from plain text to HTML?

Thanks,
Scott
