Save my documents in CMYK and they re-open in RGB!

Whenever I start a new document, I start in CMYK. All components of my layout are CMYK (the images, the objects, the text, etc). When I save and re-open the document, it's in RGB color mode! My printer has to convert my files when I bring them to him. I have CMYK and RGB start-up files. Could my printer (which isn't postcript) be causing this?

I think there are some default color settings you need to set in your preferences. Also, in the color settings use the emulate AI 6 or prepress standard. How many printers are we talking about here? BEHOLD! As Steve Jobs introduces us the latest in desk-lamp technology!
