Here is the problem:

I would like to be able to reroute/redirect mail sent to user@ourdomain.com to user@anotherdomain.com. From what I have read, MSExchange will allow all mail sent to a domain to be rerouted/redirected to another domain, however singling out particular users of a domain is much more tricky.

Can anybody help with this?

Create a custom recipient in your GAL and then have it point to the second address. You can even specify the user@ourdomain.com in the e-mail addresses page of the user properties.
