I need to install an updated version of firmware for my Cisco 8851 phones. As I understand it, I need to install the file to the Publisher, then restart the TFTP service for the Publisher, then repeat the same process or my 3 Subscribers. My question: can I do this during production hours? Thanks in advance awesome nerds!

Assuming your Pub is the TFTP server as well, then yes. And yes, you can restart TFTP during the day. It would only affect any device trying to contact TFTP (a phone booting for example).
