We've been provided a SIP trunk with a modem at one of our offices. I only need to use one of the ten numbers provided to us (dial-in conferencing). The office does not have a PBX.
1. What are the options available for me to use that trunk?
2. As we're just looking to use a single number, we're not expecting to spend too much on hardware/software.
3. We have a VPN to our main office in another country, and is there any way we can use the SIP trunk with the Gateway and Skype for Business system there?

It all depends on how enterprising you are... You can do it on the cheap if you have a PC and install Asterisk. It's free if you do it yourself.
Yes, it's a PBX, but if you only want to hook a couple of phones up to it, that should do the trick. Generic SIP phones can be had for cheap... just depends on how fancy you want them.

Integrating your SIP trunk with Skype for Business might be costly. Our corporate guys stood up a Skype for Business server, which connects to the Skype cloud, and everything costs something.

If it's just for conferencing in your board room then all you need is a SIP enabled conferencing unit such as a Polycom.
In the options add your login credentials and away you go.
