I want to change the default font in form fields in Acrobat Pro from Helvetica to a different font.

Is it possible?

It varies by which Acrobat pro version you are using, most of them are able to do so. For example, Acrobat 9 pro-touchup text tool is able to edit text attributes

Font Changes the font used by the selected text to the font you specify. You can select any font installed on your system or fully embedded in the PDF document. Document fonts are listed at the top; system fonts are listed below.
