Is there a something that will make DDF files from some data files where I do not know the structure?

Short answer: Not really.
Long answer: It is possible to make DDFs without knowing the record structure but you are going to have to guess at the structure.  It's going to be a trial and error until you get the structure correct.  
How you build DDFs is going to depend on what version of PSQL you are using.  If you are using v9 or later, DDF Builder is shipped with the product.  If you are using older versions, you are limited to third party tools like BTSearch.  BTSearch can also be used with v9 and v10.
