I am using Zebra Designer Pro. Each time I create a barcode in Code 39, the software always shows (*) asterisks character at the beginning & end of the variable. I called Zebra, they said it's the way it is. Anyone here has any idea how to remove this?

I believe that Code 39 requires a start and stop character.  In most cases this is the asterisk .  Do you see the asterisk when you print the barcode?  Without the start/stop characters the bar code reader won't be able to identify the bar code as Code 39 and won't work.

Don't print the human readable text as part of the barcode. Print it as a separate text field.
