My read receipts in windows mail are going into the 'sent items' folder.
Is this default behaviour and can it be changed?

Windows Mail - Read Receipts

I assume you mean read receipt notifications that you receive from your email recipients, not read receipt notifications that you are sending to some e-mail author when you are the recipient. If that's the case, I'd look for a stray mail rule to be the likely cause.
