Windows 2000 Roaming Profiles

We are running our servers on Windows 2000 and using roaming profiles. Our users are on XP and using Outlook XP or 2000.
Far too regularly the profile will load and Outlook will be unable to open. No amount of trying to reload it works and the only option is to delete the user's profile and then recreate it.
I would like to say however that this only happens on the Pc's where more than one person logs on with their own profile.
Any suggestions?
