who modified record and how

Can anyone tell me how to find out who modified a record and what field they modified?

Not unless that was designed into the database. Some tables contain fields something like 'LastChanged' or 'ChangedBy'. There is no way to extract that type of information otherwise. On an unsecured system everyone has the 'Admin' username with wouldn't help so you would need to create a secure database with usernames for each user. I don't think this is what you wanted to hear.

Altrenatively, if you have or are willling to implement security (and I can't imagine anyone who doesn't WANT it), look at faq181-291 which shows an (almost) painless method to do the "Whole Enchalidia".
