What steps do I need to take to have an image replace another image on a set date?
I'm looking to have a image change to another image on just Mondays and go back to original images on other days.

Its just a simple if statement to check the date, and load an image, but yes you need to tell us what server side language you have access to, as it can be a bit different depending.
