Does anybody know the best way to erase redundant files on an internet site. I'm there must be some software that can scan thorugh html and delete unused images etc..

Not exactly. If there was such a thing I probably would be afraid to trust it to be honest!

One thing I have done in your position is to download everything to my machine and delete everything from the webserver.
Then use Dreamweaver to upload just the html(asp, php or whatever) files ONLY.
There is an option to upload associated files... tick it.

Hopefully you should end up with just the necessary stuff on the server. If there is anything missing, you've still got it and can upload it manually.

Try Xenu, after you scan for links on your site, it has an option where you give it FTP details and it will tell you what orphan files exist on your webspace.
