Web Application workflow with Version Control

Does anyone use CVS or Subversion (or any type of version control) within their Web Application development workflow? I'd like to know what the alternatives are for integrating version control into a web dev workflow. At present we have 3 servers: dev, test, production. We aren't allowed to have servers running on our local machines, so I'm trying to come up with a workflow that isn't a hassle for us, but allows us to work on pages still on the dev server. If the only really viable way is to have servers installed on our local machines so we can check out files, work on them, save and view/test then I will need to make an argument for that option, so I want to make sure we don't really have a feasible alternative 1st.
