As long as you get wireless card working, then yes you can make your vmserver only use the one card.
I dont know if there are vm drivers out there for wireless cards, and I dont know of many servers using these cards as they are designed for the desktop envioroment not server, but you could always connect you ethernet card form the server to a wireless access point, this would provide full wireless enviroment
